Chef Jonathan sánchez
chef/owner/sourdough savant
Jonathan Sánchez has called Austin home since 2014 and he began his cooking career in 2018. He was most recently the Pastry Sous Chef at Olamaie, though his cooking journey started with his first love, bread. His first job in the culinary world was at Easy Tiger as an overnight baker. Later, his love of fermentation led him to Jester King Brewery, where he amassed a cult sourdough following during the pandemic while leading the baking and pastry program for the award winning brewery.
Originally from Miami, this Florida man's culinary perspective stems from the Guatemalan, Honduran, and Nicaraguan flavors of his cultural background, as well as the varied Caribbean flavors of his hometown. Don’t miss the flan de queso if you see it on the menu!
